This Faux Chocolate Mousse is super yummy! This is a really easy and very tasty “mousse”. I used it to fill mini sugar cookie cups for a Memorial Day dessert I took to a cookout. I piped it into the cups and it held it’s shape very well. For a low-carb diet this is a HEAVENLY treat!
- 1 (8 ounce) container mascarpone cheese
- 2 tablespoons heavy whipping cream
- 1 teaspoon vanilla extract
- ¼ cup chocolate chips
Mix mascarpone cheese, whipping cream, and vanilla extract in a bowl.
Melt chocolate chips in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
Fold melted chocolate into the mascarpone cheese mixture.
Refrigerate until set, 1 to 2 hours.
