Tryïng to eát lïghter doesn’t meán you háve to forgo your fávorïte foods. It just tákes á lïttle ïmágïnátïon. Thïs sálád provïdes áll of those Buffálo Chïcken Wïng flávors, wïthout the extrá cálorïes ánd cárbs!

INGREDIENTS:


2 táblespoons olïve oïl
1 pound boneless skïnless chïcken breást
1/4 cup hot wïngs sáuce (recommend Fránks Red Hot)
1 (5-ounce) bág chopped romáïne heárts
2 lárge cárrots, gráted
3 stálks of celery, chopped
4 ounces blue cheese crumbles
Ránch dressïng (store bought, or homemáde)

INSTRUCTIONS:



1. If your chïcken breásts áre reálly thïck, slïce them ïn hálf to állow quïcker cookïng wïthout dryïng them out (you cán álso buy 1 pound of chïcken tenders). Seáson wïth sált ánd pepper.

2. Heát the olïve oïl ïn á lárge skïllet over medïum heát. Pláce the chïcken breásts ïn the pán ánd cook untïl the meát ïs no longer pïnk, ápprox 8 to 12 mïnutes, turnïng over hálfwáy through. Remove from the heát ánd onto á pláte. Cover wïth foïl ánd állow to cool. Once the chïcken ïs cool enough to touch, chop ït ïnto bïte-sïzed pïeces.

3. Pláce the chïcken ánd wïngs sáuce ïn á smáll bowl, ánd toss to combïne. Set ásïde, or cover ánd pláce ïn the refrïgerátor ïf you áren’t mákïng the sálád ïmmedïátely.

4. Pláce the lettuce, cárrots, ánd celery ïn á lárge bowl, álong wïth the chïcken. Toss to combïne. Top wïth blue cheese crumbles ánd ránch dressïng.
