Easy Minestrone Soup (Olive Garden Copycat)

Minestrone soup is so hearty that it easily stands on its own as a main dish! Inspired by the classic Italian soup from Olive Garden, this version is a close copycat. Not only is it delicious, but it’s also packed with healthy ingredients. The rich, tomato-y broth is loaded with vegetables and beans, making it a perfect way to get kids to enjoy their veggies.

Minestrone is known for its thick, tomato-based broth and can be made with pasta or rice. It typically includes carrots, tomatoes, kidney beans, celery, onions, and potatoes. Originally created to use up leftover vegetables, minestrone is incredibly versatile—feel free to toss in any veggies you have on hand or adjust it to what’s fresh and in season. You really can’t go wrong with this adaptable, flavorful soup!
